Today was a fun day, a road trip down to Bristol to meet some good friends.
We went to Tampopo for lunch. I had

Then we went on to a pub and had lots of cocktail and snacky food. Yay.

A quick portable breakfast, healthy snack or a cereal bar alternative.
To make 4 breakfast portions (1 x hexb + 3 syns or 9 syns), or 8 cereal bars (4.5 syns or 2 for a hexb + 3syns)
Rum and Raisin Baked Oats
1 mashed banana – 5 syns
2 beaten eggs
140g porridge oats – 4 x hexb or 24 syns
200ml skimmed milk – 3 syns
25g raisins/sultans – 3.5 syns
Dash of rum essence
Mash your banana and add the beaten egg, mix well and then add the oats and milk. Stir well until thoroughly combined. Add raisins and rum essence, stir again and then pour into a baking dish. (I use a silicone loaf tin).
Bake at 200 for 30 minutes.Remove from baking dish and leave to cool divide into quarters.
If I’m going to use them for cereal bars, then I cut the loaf into 8 slices, place the slices on a baking tray and bake for a further 10 minutes in the oven in order to brown all sides. Cool. Keep in an airtight tub, should stay fresh for 3-4 days.
Variants – you could leave out the raisins and instead use whole fruits to up the superfree and remove some of the syns. Cherries, blueberries, apple chunks etc would all work well.
The rum essence could easily be swapped for vanilla, cinnamon, nutmeg..whatever you fancy really.
